Potato Pancakes

  1. COMBINE potato and onion in a strainer.
  2. Squeeze out any excess liquid.
  3. MIX potato, onion, egg substitute, flour, salt and pepper.
  4. HEAT olive oil in a non-stick skillet to medium heat.
  5. MOLD potato/onion mixture into medium sized patties.
  6. Place in hot skillet and cook until each side is golden brown.
  7. ENJOY with applesauce.
  8. COMPLEMENT meal with a bowl of strawberries topped with COOL WHIP for dessert.
  9. SERVE meal with a glass of water.
