Potato Pancakes
- 1-1/2 potatoes, uncooked, peeled, grated
- 1/4 sweet onion, grated
- 3 Tbsp. fat-free liquid egg substitute
- 1 Tbsp. all purpose flour
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 Tbsp. olive oil
- 3 Tbsp. unsweetened applesauce
- 1/2 cup sliced fresh strawberries
- 1 Tbsp. COOL WHIP LITE Whipped Topping
- 8 fl oz (1 cup) drinking water
- COMBINE potato and onion in a strainer.
- Squeeze out any excess liquid.
- MIX potato, onion, egg substitute, flour, salt and pepper.
- HEAT olive oil in a non-stick skillet to medium heat.
- MOLD potato/onion mixture into medium sized patties.
- Place in hot skillet and cook until each side is golden brown.
- ENJOY with applesauce.
- COMPLEMENT meal with a bowl of strawberries topped with COOL WHIP for dessert.
- SERVE meal with a glass of water.
