Lemon Asparagus Goat Cheese Pizza
- 1/2 pounds Asparagus, Shaved
- 1/4 cups Fresh Lemon Juice
- 1 clove Garlic, Minced
- 1 teaspoon Olive Oil, Plus More For Drizzling
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 1 pound Pizza Dough
- 8 ounces, weight Fresh Mozzarella, Sliced
- 5 ounces, weight Herb Goat Cheese
- 1/4 cups Green Onion, Sliced
- 2 teaspoons Lemon Zest
- Preheat oven to 500 degrees F (with the pizza stone inside, if you have one).
- Toss asparagus with lemon juice, garlic, 1 tablespoon olive oil, salt and pepper.
- Drizzle olive oil over dough and bake 4-5 minutes.
- Remove from oven and lay slices of mozzarella over the dough.
- Pile on asparagus mixture and sprinkle with goat cheese crumbles and green onion.
- Bake 15-20 minutes or until asparagus edges are golden brown and cheese is melted.
- Remove from the oven and top with lemon zest.
- Serve with wedges of lemon on the side.
