Weeknight Chicken BBQ Sandwiches
- 1 pound Chicken Breasts
- 1 Tablespoon McCormick Mesquite Seasoning
- 1 pinch Salt
- 1 pinch Pepper
- 1 Tablespoon Olive Oil
- 2 cups Stubbs BBQ Sauce
- 1 Tablespoon Vinegar
- 2 dashes Hot Sauce
- 4 whole Sandwich Buns
- Preheat oven to 350F.
- In a medium baking dish season chicken with mesquite seasoning, salt and pepper.
- Drizzle with olive oil.
- Place dish into preheated oven and cook until chicken is cooked all the way through about 20-30 minutes.
- (just make sure the juices run clear) Remove chicken from the oven and let cool.
- Once cooled, shred chicken breasts and place in a medium sized saucepan.
- Add BBQ sauce, vinegar, hot sauce and season with salt and pepper.
- Let simmer over medium heat for 15-20 minutes.
- Serve on buns!
