Fresh Apple Loaf
- 4 tablespoons honey
- 1/4 cup butter or margarine
- 1 teaspoon lemon zest grated
- 1 each eggs
- 1 1/2 cups buttermilk
- 1 cup pastry flour, whole wheat
- 3/4 cup bread flour whole wheat
- 1/2 teaspoon salt
- 2 1/2 teaspoons baking powder
- 1 teaspoon cinnamon ground
- 1/2 teaspoon baking soda
- 3/4 cup wheat germ
- 1 cup apples fresh, grated
- Cream honey and butter together with a fork.
- Add lemon peel.
- Beat the egg and buttermilk.
- Sift flours, salt, baking powder, cinnamon and soda together, stir in 3/4 cup wheat germ.
- Mix the dry ingredients into the wet ingredients, avoiding lumps but do not overbeat.
- Add the apples and stir to combine.
- Fill a greased 8x4 inch loaf pan and sprinkle top with 1 tablespoon wheat germ.
- Bake for about an hour, but check after 40 minutes.
