Coconut Shrimp

  1. In a bowl, combine the flour, seafood seasoning, egg and pineapple juice until smooth.
  2. Place coconut in a shallow bowl.
  3. Dip the shrimp into the batter, than coat with coconut.
  4. In an electric skillet, or a deep-fat fryer, heat oil to 375'.
  5. Fry shrimp just a few at a time, for 1-1/2 minutes or until golden brown, turning occasionally.
  6. Drain on paper towels or brown paper shopping bag.
  7. Serve with dipping sauce or mustard, if desired.
