Pear And Raisin Muffins
- 1 1/3 c. unsifted all-purpose flour
- 1/4 c. firmly packed light brown sugar
- 1 Tbsp. double-acting baking powder
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 2 egg whites
- 1 c. milk
- 3 Tbsp. vegetable oil
- 1 1/2 c. Oat Flakes cereal
- 1/2 c. chopped, peeled, ripe, fresh pear
- 1/2 c. raisins
- Preheat oven to 400u0b0.
- Grease twelve 2 1/2 x 1 1/4-inch muffin-pan cups (1/3 cup); set aside.
- In a medium bowl, combine flour, sugar, baking powder, cinnamon and salt.
- In a small bowl, lightly beat egg whites.
- Stir in milk and oil.
- Add to flour mixture, stirring just enough to moisten flour.
- Mix in cereal, pear and raisins.
- Fill prepared muffin-pan cups about 2/3 full. Bake until a toothpick inserted in center comes out clean, 12 to 15 minutes.
- Makes 12 muffins.
