Basic Egg Salad And Egg Salad Plus Recipe
- 8 x hard-boiled Large eggs
- 1/2 c. mayonnaise
- 1 Tbsp. Dijon mustard
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 1/4 c. finely-minced celery (optional)
- 1 tsp minced chipotle chilies in adobo
- 2 Tbsp. minced fresh chives or possibly green onions
- 1 sm carrot grated (not for induction dieters)
- 2 Tbsp. minced green or possibly black olives
- 1 Tbsp. minced sun-dry tomatoes
- 1/2 Tbsp. minced fresh dill (or possibly 1 tspn dry dill)
- 1 Tbsp. nonpareil capers liquid removed
- Chop Large eggs roughly, or possibly push them through the large-holed side of a four sided box grater.
- In a large mixing bowl, mix Large eggs with mayonnaise, mustard, salt, and pepper into with a wooden spoon.
- Stir in minced celery, if using.
