Tamale Egg Casserole
- 8 eggs
- 1/2 cup Vidalia Onion
- 1/2 cup chopped Red Bell Pepper
- 1/4 cup Half n Half
- 1/4 cup grated parmesan cheese
- 1 tbsp Crushed Garlic
- 8 frozen or fresh Beef Tamales (susbstitute any flavor)
- Preheat oven to 350.
- Then line tamales (you may need to split a few tamales to cover pan) on a buttered 6x6 pan.
- With a spatula press down tamales to create a base layer so egg mixture sits on top.
- In a bowl wisk eggs, onion, red pepper, half n half, parmesan cheese, black pepper, and garlic until well incorporated.
- Pour egg mixture on top of tamale base.
- Place in oven for 20 to 25 minutes or until egg mixture is firm.
