Bacon & Baked Potato Soup

  1. Melt butter in large saucepan or Dutch oven on medium heat.
  2. Add yellow onions and celery; cook and stir 5 min.
  3. or until crisp-tender.
  4. Add next 4 ingredients; bring just to boil, stirring constantly.
  5. Lightly crush potatoes with back of spoon.
  6. Simmer on medium-low heat 5 min., stirring frequently.
  7. Reserve 1 Tbsp.
  8. green onions and 2 Tbsp.
  9. each bacon and cheese.
  10. Add remaining green onions, bacon and cheese to soup; cook 5 min.
  11. or until cheese is melted, stirring constantly.
  12. Serve topped with reserved green onions, bacon, cheese and sour cream.
