Cheesy Chive Omelette

  1. Whisk together the egg, milk, chives and pepper.
  2. Beat egg whites until stiff peaks form.
  3. Gently fold through egg mixture.
  4. Pour half of the mixture into a pre-heated non-stick pan.
  5. Cook for 3-4 minutes.
  6. Place under a hot grill until puffed and golden.
  7. Place cheese halves on one side of the omelette, and flip one side over to form a half circle.
  8. Serve immediately.
  9. Repeat with remaining egg mixture and cheese.
  10. Serve with wholegrain toast, tomatoes and mushrooms.
