Hummus and Vegetable Wrap
- 2 cups Shredded Vegetables (zucchini, Mushrooms, Carrots)
- 1/4 cups Onion, Diced
- 1 Tablespoon Olive Oil
- 4 whole Sandwich Wraps (I Used Spinach Herb)
- 1 cup Hummus
- Use whatever vegetables you like or have on hand.
- Shred them all together in a big bowl and add the onion.
- Toss them all together to combine.
- In a skillet over medium heat, add the olive oil and vegetables.
- Toss slightly to coat and saute the veggies.
- Dont over-cook them.
- You want the vegetables to be cooked until they are just done, so they are still crisp and firm.
- Prepare your wraps by spreading 1/4 cup of hummus on each wrap.
- When the vegetables are ready spoon 1/2 cup of the vegetables on each wrap (on top of the hummus).
- Fold in the ends and then roll up the wrap so that all ends are tucked in and you have made a neat roll.
- Heat a separate nonstick skillet over medium heat and place the wraps in the skillet.
- Heat on each side until the wraps are lightly brown and toasted.
