Quick Refreshing Pasta Salad
- 6 each romaine lettuce leaves (torn into pieces)
- 1 1/2 cup chicken breast (cooked & diced)
- 1 cup small rotini noodles (or similar)
- 2 tbsp Olive oil
- 1 cup broccoli florets
- 2 cup red cherry tomatoes (sliced in halves)
- 1 each 4 oz. jar diced pimentos
- 1 cup cucumbet (diced)
- 1/2 each Italian-style cheese crumble (or feta)
- 1/4 cup parmesan cheese (grated)
- 1/3 cup light lime vinaigrette (Newman's Own)
- 1/3 cup balsamic vinaigrette (Newman's Own)
- Cook pasta according to package directions; drain.
- Drizzle pasta with olive oil and mix well; set in refrigerator to chill while chopping vegetables.
- Combine chicken, pasta, lettuce, broccoli, tomatoes, pimentos, cucumber and crumbled cheese in large bowl.
- In a separate bowl; throughly mix both dressings together before adding into salad ingredients then toss lightly until well blended.
- Sprinkle with parmesan cheese.
