Tabbouleh Salad

  1. In medium bowl, combine bulgur wheat and boiling water.
  2. Let stand 1 hr, until tender.
  3. Place in sieve and drain well.
  4. Return to bowl and stir in celery, onion, tomato, lemon juice, balsamic vinegar, oil and mint.
  5. Chill 2 hrs until flavors blend.
  6. Add salt and pepper to taste.
  7. Garnish.
  8. If desired, serve tabbouli in tomato cups (scoop pulp out of tomatoes and use the cup as a bowl).
