Okara Simmered with Lots of Vegetables
- 200 grams Okara (unohana)
- 200 grams Ground pork
- 1/2 Carrot
- 1/2 Burdock root
- 1 Green onion or scallion
- 3 tbsp Sugar
- 200 ml Water
- 3 tbsp Soy sauce
- 1 tbsp Mirin
- 1 tsp Dashi stock granules
- Cut the burdock root into long, thin shavings and soak in water.
- Julienne the carrot.
- Mince the green part of the green onion.
- Pour oil into a large frying pan or pot.
- Stir-fry the ground meat.
- (If the pan is too small, it will be very hard to mix when other ingredients are added!)
- When it's mostly heated through, add the vegetables and sugar and quickly stir-fry.
- Once the vegetables become slightly tender, add the water and seasonings.
- After it comes to a boil, let it simmer for 2-3 minutes.
- Add the okara.
- Spread it evenly in the pan and mix vigorously.
- I got carried away and made double the amount--it was really hard to mix.
- All done!
- When you taste it at first, the flavor may be a little bland, but let it sit for awhile and the flavors will absorb and it'll turn out perfectly!
- If there's not enough liquid, making it hard to mix, add water to adjust.
- If you want to add more seasonings, mix with water first and then add them.
