White Sweet Potato Soup with Pistou
- Pistou
- 2 cups loosely packed baby rocket leaves
- 1/3 tablespoon extra virgin olive oil
- 1/4 cup grated Parmesan cheese
- 2 tablespoons KRAFT Smooth Peanut Butter
- 1 tablespoon lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 teaspoons minced garlic
- 1/2 teaspoon minced chilli
- black pepper, to taste
- Soup
- 1 tablespoon extra virgin olive oil
- 1 large brown onion, chopped Safeway 3 lb For $2.99 thru 02/09
- 300g peeled white sweet potato, chopped Safeway 2 pkg For $5.00 thru 02/09
- 3 cups chicken stock
- 2 teaspoons minced garlic
- 1 teaspoon minced chilli
- 1 cup milk
- 2 tablespoons KRAFT Smooth Peanut Butter
- 25g baby rocket leaves
- salt and pepper, to taste
- Place all the Pistou ingredients in a food processor and process until almost smooth.
- Set aside.
- Heat oil in a saucepan over medium heat and saute onion until softened.
- Add sweet potato and cook for 5 minutes.
- Add stock, garlic and chili and simmer for 10 minutes or until sweet potato is tender.
- Stir in milk, peanut butter and rocket, remove from heat.
- Allow to cool slightly then blend until smooth.
- Reheat and season to taste.
- Ladle soup into bowls and serve with a swirl of Pistou.
