Chicken Sesame With Sausage
- 3 lbs chicken, cut up
- salt and pepper
- 1 cup chicken broth
- 1 cup salsa
- 1 tablespoon cooking oil
- 1 small onion, chopped
- 2 tablespoons sesame seeds
- 2 garlic cloves, minced
- 12 lb chorizo sausage, crumbled (or Italian sausage)
- 2 tomatoes, chopped
- Sprinkle chicken pieces with salt and pepper.
- Place in a large saucepan or dutch oven.
- Add the chicken broth and salsa; bring to boiling.
- Cover and simmer for 30 minutes or until chicken is almost tender.
- Meanwhile, in another large saucepan, heat oil.
- Cook onion, sesame seeds and garlic in oil for 2 minutes.
- Add crumbled sausage; saute 10 minutes more to cook sausage through, stirring frequently.
- Drain off excess fat from both sausage mixture and chicken mixture.
- Add sausage mixture to chicken mixture in pan.
- Add tomatoes and spoon sauce over chicken.
- Cover and simmer 10 minutes more.
- Serve chicken with sausage sauce.
