Simple and Delicious Madeleine
- 100 grams Cake flour
- 100 grams Sugar
- 100 grams Butter
- 2 Eggs
- 1 tsp Baking powder
- 1 Vanilla oil
- Add the eggs which was brought to room temperature into a bowl, and mix.
- Add the sugar, and whip to incorporate air into the batter until it turns white and soft peaks form.
- Sift in the cake flour and baking powder in, in 2 batches, and fold them in with a cutting motion.
- Please be careful not to knead the batter.
- Melt the butter and add to the Step 2 batter.
- Mix evenly, add the vanilla oil, and mix some more.
- Fill the madeleine pan with the batter about 80 %, and bake in the oven preheated to 180C for about 15 ~ 20 minutes.
- When it starts to rise and it's nicely browned, remove from the pan.
