Country Ham Frittata
- 150 each eggs
- - salt
- - black pepper
- 12-1/2 cups potatoes, cooked, chopped
- 1-1/2 qt. green onions, sliced
- 1-1/2 qt. butter
- 6-1/4 cups OSCAR MAYER Ham Bulk Water Added, chopped
- 1-1/2 qt. KRAFT 100% Shredded Parmesan Cheese - Full Moisture
- 2 Tbsp. ground sage
- For one serving: Beat 3 eggs until foamy.
- Season with salt and pepper to taste; set aside.
- Saute 1/4 cup potatoes and 2 Tbsp.
- onions in 2 Tbsp.
- butter in 10-inch skillet 2 minutes.
- Add eggs; cook until egg mixture is almost set but top is still moist.
- Sprinkle with 2 Tbsp.
- ham, 2 Tbsp.
- cheese and 1/8 tsp.
- sage.
- Place under broiler.
- Broil until eggs are set.
- Serve immediately.
