Country Ham Frittata

  1. For one serving: Beat 3 eggs until foamy.
  2. Season with salt and pepper to taste; set aside.
  3. Saute 1/4 cup potatoes and 2 Tbsp.
  4. onions in 2 Tbsp.
  5. butter in 10-inch skillet 2 minutes.
  6. Add eggs; cook until egg mixture is almost set but top is still moist.
  7. Sprinkle with 2 Tbsp.
  8. ham, 2 Tbsp.
  9. cheese and 1/8 tsp.
  10. sage.
  11. Place under broiler.
  12. Broil until eggs are set.
  13. Serve immediately.
