Dried Tomato & Pine Nuts Pastasotto (Pasta Risotto)

  1. In a wok, heat onion a few minutes in olive oil (without letting it brown).
  2. Add pasta and stir until they are well coated.
  3. Pour broth as you go along, waiting each time until it is completely absorbed, stirring regularly.
  4. Cook about twenty minutes (I used about 800 ml of broth).
  5. Add tomatoes, Parmesan and pine nuts and stir.
  6. Heat 1 minute more.
  7. Serve immediately.
