Pumpkin-Cinnamon Tiramisu
- 2 pkg. (3 oz. each) soft ladyfingers, split, divided
- 2 Tbsp. MAXWELL HOUSE Instant Coffee Walgreens $6.99 thru 02/06
- 1 Tbsp. sugar
- 1 cup boiling water
- 2 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
- 2/3 cup sugar
- 1 cup canned pumpkin
- 1/2 tsp. ground cinnamon
- 2 cups thawed COOL WHIP LITE Whipped Topping
- 1 oz. BAKER'S Semi-Sweet Chocolate
- Arrange half the ladyfingers on bottom of 13x9-inch dish.
- Dissolve coffee and 1 Tbsp.
- sugar in boiling water.
- Brush 1/2 cup coffee mixture over ladyfingers in dish.
- Beat Neufchatel in large bowl with mixer until creamy.
- Add 2/3 cup sugar; mix well.
- Add pumpkin and cinnamon; mix well.
- Blend in COOL WHIP.
- Spread half the Neufchatel mixture over ladyfingers in dish; top with remaining ladyfingers.
- Brush with remaining coffee.
- Cover with remaining Neufchatel mixture.
- Grate chocolate over top.
- Refrigerate 4 hours.
