Memorial Day cauliflower salad
- 2 lb cauliflower
- 1/3 cup mayonnaise
- 1 tbsp finely chopped kosher pickle, sour
- 1 1/4 tbsp yellow prepared mustard
- 1/2 tsp dill weed
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp granulated garlic powder
- 1 tsp paprika
- 1/4 tsp Hungarian paprika
- 6 large eggs
- Microwave the cauliflower for 11 minutes
- Boil eggs about 10 minutes.
- Let cool peel rinse and slice.
- Mix all but half the dill weed and Hungarian paprika.
- The add the rest to top as a garnish.
