Apricot And Rice Muffins Recipe
- 1 1/2 c. Flour
- 2/3 c. Whole Wheat Flour
- 1/3 c. Rice Bran
- 1 Tbsp. Baking pwdr
- 1 tsp Cinnamon
- 1 c. Cooked, brown Rice
- 1 1/2 c. Dry Apricots, diced
- 1/2 c. Raisins
- 1/2 c. Dry Prunes
- 1/4 c. Walnuts, minced
- 1 c. No Fat Yogurth
- 2/3 c. Maple Syrup
- 1/4 c. Oil
- 1/4 c. Eggsubstitute or possibly
- 1 x Egg, lightly beaten
- 1.
- In large bowl combine flours, rice bran, baking pwdr and cinnamon.

- Stir in rice, apricots, raisins, prunes and walnuts.
- 3.
- In a small bowl, whisk together the yogurth, syrup, oil and egg.
- 4.
- Pour over dry ingridients and fold together till just moistened.
- Don't overmix.
- 5.
- Line 18 muffin c. with paper liners.

- Bake at 350 F till edges and tops begin to brown, about 45 min.
