Classic homemade tomato soup

  1. In a large pot heat oil.
  2. Add onion and garlic, cook until soft but not browned
  3. Add flour and stir.
  4. Add all other ingredients and bring to a simmer while stirring.
  5. Reduce heat and simmer for 40 minutes.
  6. Use immersion blender to puree.
  7. If you do not have an immersion blender use a standard blender to puree in batches but be sure to take off center cap and replace with a damp cloth to allow steam to escape.
  8. Season with salt and pepper.
  9. Best served with grilled cheese!
