Avocado Pocket Sandwiches

  1. Dice half of the avocado.
  2. Reserve other half.
  3. Toss avocado, vegetables and cheese with dressing.
  4. Slit pita breads and pull apart halfway, to form pocket.
  5. Fill with 1/4 of vegetable cheese mixture.
  6. Mash remaining avocado with lemon juice and tomato.
  7. Spoon 1/4 mixture into each pita sandwich.
