Banana Loaf (Microwave) Recipe

  1. Since I didn't have a loaf pan except one for Microwave, I decided to cook this recipe which way.
  2. It was a mistake - a loaf pan cooks the bread at the ends, first, and the middle didn't begin to look done until I'd cooked it 11 min.
  3. Next time, use the glass ring pan.
  4. Prepare ingredients: grate orange rind and set aside, mash bananas, dice the apricots and chop the nutmeats.
  5. Blend the oil, sugar and rind till creamy, then beat in the egg substitute and banana pulp.
  6. With the mixer on slow, add in the baking pwdr, wheat germ and flour, then increase the speed to medium and beat the batter till smooth.
  7. Mix in the apricots and nutmeats.
  8. Spray the ring mold with canola oil spray.
  9. Scrape the batter into the mold and Microwave on high for 6 min (more if necessary).
  10. A toothpick inserted in the thickest part should come out clean.
  11. Turn out on a plate on a rack and cold before slicing.
