Homemade Ginger Beer

  1. Place the ginger in the bowl of a food processor, and process until finely chopped.
  2. Transfer to a large pot or bowl, and add the boiling water.
  3. Allow to stand for 1 hour.
  4. Drain through a fine sieve lined with a double thickness of damp cheesecloth.
  5. Discard the solids.
  6. Add the lime juice and sugar, and stir to dissolve.
