Tony Roma's Blue Ridge Smokies Sauce by Todd Wilbur
- 1 cup ketchup
- 1 cup apple cider vinegar or 1 cup red wine vinegar
- 12 cup brown sugar, packed
- 14 cup molasses
- 1 12 teaspoons liquid smoke (optional)
- 12 teaspoon salt
- 14 teaspoon black pepper, rounded
- 14 teaspoon garlic powder
- 14 teaspoon onion powder
- Combine all of the ingredients in a medium saucepan over high heat, and whisk until smooth.
- Bring sauce to a boil, for 2 minutes then reduce heat and simmer uncovered for 30-40 minutes or until sauce has thickened.
- Use on pork spareribs -- as cooked with the method from the book Top Secret Restaurant Recipes -- or any of your beef, pork or chicken recipes.
