Pickled Onions Recipe

  1. Scald onions in boiling water about 2 min, then quickly dip into cool water.
  2. Peel onions; place in large bowl.
  3. Sprinkle onions with salt; cover with cool water; let stand at least 12 hrs.
  4. Drain onions; rinse and drain again.
  5. Combine sugar, mustard seed and vinegar in saucepan; simmer 5 min.
  6. Make 2 small slits in each red pepper.
  7. Pack onions with 1 pepper and 1 bay leaf in each clean, warm jar.
  8. Pour warm liquid over onions to within 1/2 inch of top, making sure vinegar solution covers onions.
  9. Cap each jar at once.
  10. Process 10 min in boiling water bath.
  11. Makes 4-5 pints.
