English Style Chicken Salad

  1. Slice the onion and celery thinly.
  2. Mix the ingredients marked together.
  3. Remove the skin from the chicken breast, and pierce the side of the breast meat that the skin was on with a fork several times.
  4. Season both sides of the chicken with the ingredients marked .
  5. Massage the salt in gently.
  6. Make sure to season the chicken well at this stage.
  7. Put the seasoned chicken in a heatproof container skin side down.
  8. Cover with the sliced onion and celery and add the white wine.
  9. Cover loosely with plastic wrap and microwave for 5 minutes at 500 W. When the juices run clear when you pierce the thickest part of the meat with a skewer, it's done.
  10. Cut the chicken into bite-sized pieces.
  11. Wring out the onion and celery well.
  12. Put the chicken and vegetables in a bowl, combine with the ingredients, and adjust the seasoning with salt and pepper.
  13. This is my favorite lemon and dill seasoning.
