English Style Chicken Salad
- 250 grams Chicken breast meat
- 1 enough to coat both sides of the chicken Lemon and dill seasoning (or Krazy Salt)
- 1/4 tsp per side Salt
- 2 tbsp White wine
- 100 grams Onions
- 50 grams Celery
- 1 tbsp Mayonnaise
- 1/4 tsp Curry powder
- 1/4 tsp Garlic (grated)
- 1/3 tsp Lemon juice
- 1 tsp Apricot jam
- 1 dash of each Salt and pepper
- Slice the onion and celery thinly.
- Mix the ingredients marked together.
- Remove the skin from the chicken breast, and pierce the side of the breast meat that the skin was on with a fork several times.
- Season both sides of the chicken with the ingredients marked .
- Massage the salt in gently.
- Make sure to season the chicken well at this stage.
- Put the seasoned chicken in a heatproof container skin side down.
- Cover with the sliced onion and celery and add the white wine.
- Cover loosely with plastic wrap and microwave for 5 minutes at 500 W. When the juices run clear when you pierce the thickest part of the meat with a skewer, it's done.
- Cut the chicken into bite-sized pieces.
- Wring out the onion and celery well.
- Put the chicken and vegetables in a bowl, combine with the ingredients, and adjust the seasoning with salt and pepper.
- This is my favorite lemon and dill seasoning.
