Angel Food Cake

  1. Put empty 10-inch tube pan in a hot oven (425u0b0).
  2. Beat egg whites, salt and cream of tartar until stiff, but not dry.
  3. Fold in sifted granulated sugar 2 tablespoons at a time.
  4. Sift confectioners sugar and cake flour together 5 times.
  5. Fold into egg white mixture 2 tablespoons at a time.
  6. Add vanilla and almond extract.
  7. Remove pan from oven; pour batter immediately into hot pan.
  8. Bake in hot oven (425u0b0) exactly 23 minutes; don't peek. Remove from oven.
  9. Place upside down on a cake rack.
  10. Remove from pan when cooled.
