Blackened Chicken Brochettes With Cilantro Lime Butter Recipe
- 2 stk butter melted
- 2 Tbsp. minced cilantro Juice of 2 limes
- 4 lb boneless skinless chicken breasts cut 1" cubes
- 1 c. blackening seasoning
- 1 pt cherry tomatoes halved
- 2 lrg red onions cut 1" pcs
- 15 x bamboo skewers
- Combine butter, cilantro and lime juice.
- Set aside.
- Dredge chicken pcs in seasoning mix, shaking off excess.
- On each skewer, alternate pcs of chicken with cherry tomatoes and 2 or possibly 3 layers of onion chunks.
- Grill over medium-warm coals, brushing brochettes with the cilantro-lime butter while they cook.
- Grill for 5 min on each side, or possibly till chicken is hard to the touch.
- This recipe yields 5 servings.
