Chives With Eggs--Goes Great With Rice
- 3 Eggs
- 1/2 tsp Salt
- 1 dash Pepper
- 1 bunch Chinese chives
- 2 tsp Soy sauce
- 1 tsp Oyster sauce
- 2 tsp Sugar
- 2 tsp Sake
- 1 tbsp or more Vegetable oil
- Wash the chives and cut into appropriate lengths.
- Combine the ingredients.
- Beat the eggs, and season with salt and pepper.
- Combine the ingredients.
- Heat 1 tablespoon oil in a pan.
- Once heated, add the egg and stir quickly over high heat.
- Remove the egg before it cooks through.
- Over high heat, add a little oil and fry the chives and most of the mixture from Step 1 (leave a small amount for the finish).
- Add the half-cooked eggs and mix.
- Add the leftover sauce to taste.
