Carrot Soup

  1. Melt butter in a pan.
  2. Saute onion and garlic until tender.
  3. Add water, bouillon, carrots, rice and apple.
  4. Bring to a boil.
  5. Cover and simmer on medium low for 25 minutes or until carrots are tender.
  6. Let cool for 5 minutes then blend in blender, add coriander then blend for 2 seconds to mix.
  7. Add salt (optional) and cream, reheat and serve.
