Great Chicken

  1. Cut chicken up the back work legs until playable.
  2. Butterfly on rack
  3. Put chicken on a rack i used a rotisserie oven rack over my roasting pan
  4. Salt and pepper chicken let stand one hour add wine chicken stock garlic and thyme to roasting pan under chicken
  5. Turn up oven to broil
  6. Place chicken under broiler about three inches from element for ten minutes turning often for even brown
  7. Turn oven down to 375 baste with butter
  8. Let roast for an hour and quarter butter baste again half way thru
  9. Turn chicken over
  10. Raise heat to broil broil for five minutes turning at 2 30
  11. Remove chicken tent with foil for 12 minutes
  12. Strain broth in pan with sive into sauce pan add corn starch mixture and italian seasoning
  13. Skim with bread to remove excess chicken fat
  14. Bring to a boil whisking often turn heat to low simmer for five minutes
  15. Serve use sauce for dipping the chicken gravy for mashed potatoes or my favorite over egg noodles
