Chili Roast Potatoes
- 1 lb new potato
- 23 cup vegetable oil
- 1 teaspoon chili powder
- 12 caraway seed
- 1 teaspoon salt
- 1 tablespoon chopped basil
- Scrub potatoes and cook in a pan of boiling water for 10 minutes.
- Drain thoroughly.
- Pour a little oil in a shallow roasting pan to coat the base.
- Heat the oil in the oven at 400 degree Fahrenheit for 10 minutes.
- Add potatoes to the pan and brush them with the hot oil.
- In small bowl, mix chili powder, caraway seeds, and salt.
- Sprinkle over the potatoes, turning to coat.
- Add remaining oil to the pan and roast in the oven for 15 minutes, until potatoes are cooked through and can be pierced with a fork.
- Using a slotted spoon, remove potatoes, draining the oil.
- Put in a warm serving dish and sprinkle with chopped basil.
- Serve immediately.
