Creamy Smooth Pecan Pralines Recipe
- 2 c. brown sugar
- 1/2 c. white Karo syrup
- 1/2 c. lowfat milk
- 2 c. pecan halves
- 1/2 stick butter
- 1 tbsp. vanilla
- Combine sugar, syrup, water, and pecans in a heavy 3 qt saucepan.
- Stir over medium heat till sugar is dissolved and mix comes to a boil.
- Cook, stirring occasionally, till mix reaches soft ball stage (small amount forms soft ball when dropped into cool water).
- Remove saucepan from heat; add in butter and vanilla.
- Allow candy to cold.
- Whip till mix gradually changes to lighter color and becomes creamy.
- Drop by tablespoonful on buttered cookie sheet.
- Push mix from Tbsp.
- with a tsp.
- to hasten dropping before Praline becomes too hard to shape.
