Spicy Nut Mix
- 1 whole Egg White
- 1 teaspoon Paprika
- 1 teaspoon Chili Flakes
- 1 Tablespoon Kosher Salt
- 1/2 cups Blanched Almonds
- 1 cup Unsalted Cashews

- Preheat your oven to 380 F/190 C. Line a rimmed baking tray with baking parchment.

- In a medium-sized bowl whisk the egg white until frothy.
- Using an electric whisk, this took just a couple of minutes.
- 3.
- Stir in the paprika, chili flakes and half the salt.
- 4.
- Add the cashews and almonds and stir to mix well.
- 5.
- Spread the mixture onto your baking tray in a single layer, then sprinkle over the remaining salt.

- Bake for 20 minutes, stirring and breaking up the nuts halfway through.
- The mixture will be quite sticky so be patient with it.
- After 20 minutes check to see how theyre doing.
- They may need a few minutes more to brown off, just make sure they dont burn.
- 7.
- Once done, remove pan from the oven.
- Let the nuts cool for 15 minutes before serving, using your fingers to break up any clumps.
