Portuguese Vegetable Soup Recipe
- 1 pound Kielbasa, cut in bite size pcs
- 1 1/2 tbsp. extra virgin olive oil
- 1/2 c. onion
- 1 garlic clove, chopped
- 2 1/2 c. diced potatoes
- 5 c. real chicken stock
- 1 1/2 c. minced tomatoes
- 1 can kidney beans
- 1/4 pound minced kale
- 3/4 teaspoon pepper
- 2 teaspoon salt
- In Dutch oven saute/fry onions and garlic in oil till onion is tender but not browned.
- Add in potatoes, stock, Kielbasa, tomatoes, beans, salt and pepper.
- Simmer till potatoes are tender.
- Add in kale and simmer 10 min.
- Serve with minced parsley.
- Makes 10 c..
