White Chocolate Chunk Cookies
- 1 c. shortening
- 3/4 c. sugar
- 3/4 c. firmly packed brown sugar
- 3 eggs
- 1 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. flaked coconut
- 1/2 c. rolled oats
- 1/2 c. chopped walnuts
- 2 (6 oz.) pkg. white baking bars, cut into 1/4 to 1/2-inch chunks
- Beat shortening, sugar and brown sugar until light and fluffy. Beat in eggs, one at a time.
- Add vanilla and blend well.
- Add flour, baking powder, soda and salt.
- Mix well.
- By hand, add remaining ingredients.
- Drop by rounded tablespoonfuls on ungreased cookie sheet, 2-inches apart.
- Bake at 350u0b0 for 10 to 15 minutes or until light golden brown.
- Cool on sheet for 1 minute. Then remove.
