Cheddar Chicken Casserole
- 12 oz good quality extra sharp cheddar cheese, shredded
- 1 1/3 can cream of chicken soup
- 3/4 cup mayonaisse
- 3/4 cup sour cream
- 1 tbsp lemon juice
- 1 pepper to taste
- 6 cup cooked white rice
- 2 1/2 lb cooked chicken breast, cut into bite sized pieces
- preheat oven to 350, spray 13" by 9 "casserole with cooking spray
- add rice to casserole dish
- in medium bowl, mix soup, mayo, sour cream,lemon juice, pepper, and half the cheese.
- yes, this dinner is going right to our butts :P stir to combine
- mix in chicken, stir to coat.
- spread evenly over rice.
- sprinkle with remaining cheese
- cook about 40 minutes until cheese is golden brown.
- *note- this is one of those things that tastes even better the next day, but we rarely leave any!
