French Toast Crostini W/Honey Creme Fraiche

  1. Preheat oven to 200 degrees.
  2. In a medium bowl, whisk together eggs, cream, vanilla, salt and cinnamon.
  3. In a large skillet on medium heat, melt half of the butter.
  4. Dip (do not soak) each side of the bread in the egg mixture and gently shake off excess.
  5. In batches over medium-high heat, adding more butter as needed, cook bread until golden brown on both sides.
  6. Remove and keep warm in the oven.
  7. To serve, top each slice with a dollop of Honey Creme Fraiche, a drizzle of honey and a sprinkle of almonds.
  8. Honey Creme Fraiche: In a medium bowl, whisk all together.
