Chicken with Black Beans & Smoked Ham

  1. Heat dressing in Dutch oven or large deep skillet on medium-high heat.
  2. Add chicken; cook 5 min.
  3. on each side or until chicken is evenly browned on all sides.
  4. Remove chicken from skillet; set aside.
  5. Add onions, bell peppers and ham to skillet; cook on medium heat 5 min.
  6. or until vegetables are crisp-tender.
  7. Add beans, tomatoes, corn, jalapeno peppers and cumin; mix well.
  8. Top with chicken.
  9. Bring to boil; cover.
  10. Simmer on low heat 20 to 25 min.
  11. or until chicken is done (165F).
  12. Serve over rice.
