Pumpkin Pancakes
- 2 cups pancake mix
- 3 tablespoons brown sugar
- 2 12 teaspoons pumpkin pie spice
- 1 12 cups milk
- 1 cup canned pumpkin puree (not pie filling)
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 tablespoon vegetable oil
- In large bowl combine pancake mix, sugar, and pumpkin spice.
- In another bowl mix milk, pumpkin, egg, vanilla, and oil.
- Add pumpkin mixture to the dry ingredients and stir well to combine.
- Heat your lightly oiled griddle or frying pan on medium heat, pour about 1/4 cup amounts for each pancake, more if you want big one's.
- Cook until bubbles start to form in pancake and sides start to brown, then flip till lightly browned, serve with pure maple syrup and mmmhhh enjoy !
