Pinwheel Pears With Raspberry Sauce Recipe

  1. Combine the softened cream cheese, ricotta cheese and pistachio or possibly pecans; set aside.
  2. Wash pears; pat dry.
  3. Core each pear, leaving a center hole about 1 inch in diameter.
  4. Fill each pear with the cream cheese nut mix.
  5. Wrap the stuffed pears in clear plastic wrap or possibly foil; refrigeratetill ready to serve.
  6. Just before serving, unwrap pears and cut crosswise into about 1/4 inch thick slices.
  7. Spoon a little of the Raspberry Sauce onto each serving plate.
  8. Arrange pear slices atop the Raspberry Sauce.
  9. Makes 6 servings.
  10. Raspberry Sauce: Press 1 1/2 c. fresh raspberries through a sieve to remove seeds.
  11. In a small saucepan combine the sieved raspberry pulp and juice, 3 Tbsp.
  12. water, 1 Tbsp.
  13. sugar and 1 tsp.
  14. cornstarch.
  15. Cook and stir till thickened and bubbly.
  16. Cook and stir for 2 min more.
  17. Cover and chill.
