Grilled Mediterranean Sandwich
- 8 slices Italian bread
- 12 slices deli ham (about 10 oz.)
- 8 oz. part-skim mozzarella cheese, sliced
- 1/2 cup roasted red bell pepper, cut into 12 (1/2-inch) strips
- 1/4 cup margarine or butter
- Top each of 4 slices of bread with 3 slices ham, 2 ounces mozzarella and 3 strips of roasted red pepper.
- Top each with remaining bread slices.
- Spread both sides of each sandwich with margarine or butter.
- Place in skillet or griddle over medium heat; cook on both sides until golden brown and cheese melts.
