Smoked Potatoes

  1. Cut potatoes in 1/2- to 3/4-inch slices, leaving skin on.
  2. Arrange them on smoker rack and season to taste with salt and pepper.
  3. Depending on moisture content of potatoes, cook on medium heat, using a tablespoon of hickory wood chips.
  4. Smoke for 35-45 minutes.
  5. Remove from smoker and toss with butter, salt and pepper to taste.
