Smoked Potatoes
- 3 medium baking potatoes, scrubbed
- 1 Tbs. butter
- salt and pepper, to taste
- Cut potatoes in 1/2- to 3/4-inch slices, leaving skin on.
- Arrange them on smoker rack and season to taste with salt and pepper.
- Depending on moisture content of potatoes, cook on medium heat, using a tablespoon of hickory wood chips.
- Smoke for 35-45 minutes.
- Remove from smoker and toss with butter, salt and pepper to taste.
