Sauteed Fish with Pan-Roasted Fall Vegetables
- 2 cups cut-up fresh pumpkin (1-inch chunks)
- 1/4 cup KRAFT Zesty Italian Dressing
- 4 cod fillets (1 lb.)
- 1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
- 1 cup frozen peas
- 1/4 cup chopped PLANTERS Pecans
- 2 cups coarsely chopped red peppers
- 1/2 cup chopped onions
- Cook pumpkin in large saucepan of boiling water 10 min.
- ; drain.
- Heat dressing in large skillet on medium-high heat 1 min.
- Add fish; cook 6 min.
- or until fish flakes easily with fork.
- Remove from heat; cover to keep warm.
- Prepare Dinner in large saucepan as directed on package, adding peas for the last minute of the Macaroni cooking time.
- Meanwhile, cook nuts in large skillet on medium heat 4 to 5 min.
- or until toasted, stirring occasionally.
- Add peppers, onions and pumpkin; cook 10 min.
- or until peppers and onions are tender, stirring frequently.
- Serve Dinner mixture topped with fish and pumpkin mixture.
