Mediterranean Pasta Salad
- 1 (12 ounce) bag penne pasta
- 1 (6 ounce) jar sun-dried tomatoes
- 3 zucchini
- 3 yellow squash
- 12 ounces artichoke hearts
- 6 ounces kalamata olives, sliced
- 4 ounces purple onions, chopped
- 6 ounces feta cheese
- 3 ounces roasted garlic
- 2 ounces fresh parmesan cheese
- 2 ounces olive oil
- 2 ounces balsamic vinegar
- grill zuchinni and squash.
- cook penne pasta.
- mix ingredients together and toss olive oil and balsalmic vinegar.
