Streamline Beef Minestrone Soup
- 1/2 lb. lean ground beef
- 1/2 lb. ground turkey
- 1 (13 3/4 oz.) can Italian style stewed tomatoes, broken up
- 1 (13 3/4 oz.) can single strength beef broth
- 1 c. frozen mixed vegetables
- 3/4 c. fresh zucchini, thinly sliced
- 1/2 c. shell-shaped pasta
- 3 Tbsp. grated Parmesan cheese, divided
- 1/8 tsp. garlic powder
- 1/8 tsp. ground red pepper
- Combine tomatoes, beef broth, vegetables and pasta in large pot.
- Bring to boil, reduce heat to medium and cook until pasta is tender, about 20 minutes.
- Stir occasionally.
- Meanwhile, combine ground beef and turkey, 2 tablespoons cheese, garlic powder and red pepper.
- Form 24 meatballs with mixture and put on microwave-safe baking dish.
- Cover with plastic wrap and microwave on High 3 1/2 to 4 minutes, stir after 2 minutes.
- Put meatballs in soup and stir to combine.
- Cover and let stand 5 minutes.
- Garnish with remaining cheese.
- Yields 4 servings.
