Orange, Walnut & Spinach Salad
- 1 pkg. (10 oz.) fresh spinach
- 1 can (11 oz.) mandarin oranges, drained with 2 Tbsp. liquid reserved, divided
- 1 red onion, thinly sliced, separated into rings
- 1-1/2 cups chopped PLANTERS Walnuts, toasted
- 1/4 cup red wine vinegar
- 2 Tbsp. olive oil
- Toss spinach with oranges, onions and nuts in large bowl.
- Whisk reserved orange liquid, vinegar and oil until blended.
- Add to salad; toss to coat.
- Serve immediately.
